Spicy Grilled Salmon with Coriander Salsa

Directions

  1. Pre-heat the oven to 200°C/400°F/Gas Mark 6.
  2. Combine the Soy Sauce, lemon grass, chilli pepper sauce, ginger and coriander stalks. Place the salmon in a non-metallic dish, pour over the marinade, cover and leave to marinate for at least 30 minutes in the fridge.
  3. Place the salmon on a baking sheet, drizzle with the honey and bake for around 12 minutes.
  4. Mix the salsa ingredients together - chopped red chillies, chopped spring onions and coriander.
  5. Drizzle the salmon with the salsa and serve.
